In the remote highlands of Oaxaca, in a cloud forest above 1,500 meters, sugarcane grows untamed in small family plots.
No irrigation. No chemicals. Just rich volcanic soil and mountain mist.
Here, in the village of Río Tuerto, José Luis Carrera distills Paranubes, a raw and vivid aguardiente de caña.
Why Paranubes?
Paranubes reflects the Sierra Mazateca like few spirits reflect their place. The cane is grown and cut by hand in small fields.
Each varietal is native to the region, and each distillation carries the altitude and air it comes from. Fermented outdoors without controls, distilled without dilution or filtration, Paranubes brings volcanic freshness and structured power.
Its taste is earthy, vegetal, saline
— and unmistakably alive.
